||Niagara Peninsula: Twenty Mile Bench
Fruit for the 2012 Riesling was sourced from our estate vineyard (Sept 15/16) and another block of Riesling along the Twenty Mile Bench. (Oct 18) All fruit was hand-harvested between Sept 16 & Oct , sorted and whole-bunch pressed to yield the most pure juice. A cold fermentation with a variety of yeast strains allow the citrus & grapefruit notes to shine. The batches were stopped at the ideal sweetness level to ensure a balanced wine.
